Since its opening in 1987, Al Fassia, led by Saïda Chaab and her relatives, has been run entirely by women, as uncommon then as it is now. The restaurant has been hailed as the town’s place to eat for almost as long. Start with the pastilla, a baked chicken or pigeon meat filled phyllo pie, slow-cooked onions with fluffy eggs, almonds, and sugar powder. Then dive into some of the more uncommon tagines, including caramelized pumpkin chicken or almond beef, shallots, and rice. Al Fassia has a place in Agdal, but the one in Gueliz has a better environment and better service in the kitchen.
