For that matter, don’t imagine something expensive or silverware on this tiny street that has become associated with Mechoui, entire sheep roasted in underground clay ovens under many row houses and sold from three shops. Tangia (sheep slow-cooked with garlic, saffron, and preserved lemons in a clay urn) and ras (roasted sheep’s head) are also provided by the vendors, and all is sold by weight. Make sure that the meat is sprinkled with the salt and cumin given.
